Question 4 of 4

When does Saturday have to close?

The Saturday closeout can start. Where should we reach you?

You will be talking to the Steven Palmieri practice.

Next you pick a time for a free video call with the Steven Palmieri practice. Nothing to sign, nothing to pay.

    How the Saturday closeout works

    1. Name the total that slipsFour taps. Drawer against the processor, gift cards, or food against the bar.
    2. Share one nightThe sheet and the deposit on a screen. A year of Saturdays can wait.
    3. Leave with four linesFood, bar, cards still owed, and the deposit, each named, before anyone drafts a return.

A sheet that ties, not a kitchen visit

The check names which of the four totals will not agree and what one Saturday has to show. It does not stand in the dining room.

Payday stays on a provider you already run. We set it up. We do not press pay, and a web page cannot finish the return.

Steven Palmieri is a Tax CFO and the Entrepreneur's CFO. The practice is not a CPA firm and does not sign audit or assurance reports.

    Questions people ask first

Is a sold gift card a sale that night?

No. It is money the restaurant still owes until a plate goes out. Counting it as Saturday's income makes the night look finished too soon.

Why is the deposit smaller than the sales?

The card company keeps a fee before the money lands. Book the sale, the fee and the deposit as three figures. They are not supposed to match as one number.

    Do you run restaurant payday?

No. A provider you choose does that. We set it up so the wage lines agree with the Saturday sheet. The pay click stays yours.

Who reads the sheet with me?

Steven Palmieri, a Tax CFO, on a video call. Lining up the four totals is part of that work. The practice is not a CPA firm.
